Ben’s Bolognese
Bolognese recipe
For 4 people w lots of left over sauce to freeze / eat next day
Ingredient list:
Olive oil
2 shallot
5 garlic clove
1 leek
1 small fennel tops included
Small handful picked and finely chopped thyme
1kg beef mince (or 500g beef and 500 pork mince)
1/4 bottle red wine ❤️
3 small tin mutti polpa
1 table spoon tomato paste
Large handful picked and chopped oregano
Large handful picked and torn basil
Large handful picked and chopped parsley
Fish sauce
Soy sauce
Brown sugar
Balsamic vinegar
500g pasta of choice
Making:
Finely dice shallot, garlic and fennel.
Half and finely slice leek
In a large pot warm olive oil and sweat leek, shallot and fennel until translucent, without colour. Season each step gently with salt and pepper, taste as you go
Add garlic, continue cooking
Add mince and break up with a whisk so it’s all nice and broken up, cook until cooked through and nicely coloured
Add tomato paste, cook out 1 minute
Add wine and reduce completely
Add tomatoes, on a low heat cook for at least an hour , stirring and making sure the bottom doesn’t catch
Once nicely reduced season with brown sugar, balsamic fish sauce and soy (go easy and taste as you go, drops at a time)
Cook your pasta, add all your herbs to the sauce
Serve with parm
